WTVOC shared with me her fabulous open face turkey sandwich recipe, so here is my trade off. Hope you like it, gurrrl.
Turkey Tandoori Style
So when I made this, I made it thanksgiving style (whole bird roasted). You can also do that way, or you can spatchcock the bird and roast in less time, or you can buy your turkey cut into pieces. The marinade listed below is for a chicken, so I’d double or triple the amounts depending on the bird size and how you’re cooking it.
Marinade:
1 medium onion, peeled and coarsely chopped
6 whole cloves garlic, peeled and coarsely chopped
2 inch piece of fresh ginger, peeled and coarsely chopped
2-3 serrano chilies, coarsely chopped
3 TBSP lemon juice
8oz plain yogurt
1 TBSP ground coriander
1 TBSP ground cumin
1 TSP ground turmeric
1 TSP garam masala
1/4 TSP ground mace (I didn’t use this, it tasted fine without it)
1/4 TSP ground nutmeg (I use fresh grated)
1/4 TSP ground cloves
1/4 TSP ground cinnamon
4 TBSP olive oil
2 TSP salt
1/4 TSP freshly ground black pepper
Put onions, garlic, ginger, chilies and lemon juice in food processor or blender and blend to a smooth paste. Place in a large bowl; add to it the yogurt, coriander, cumin, turmeric, garam masala, nutmeg, cloves, cinnamon, olive oil, salt and pepper and mix thoroughly.
Wash and dry the bird. Pour marinade all over bird (including inside the cavity and under the skin). Cover and refrigerate overnight. Roast according to weight (in the marinade. I swear it was the best sauce ever). If spatchcocked or in pieces, you can grill on gas or charcoal grill.
