Give them to me! I want them!
Ever on the lookout, I'm out of new ones to try (granted, I won't try them till some time after the BIG MOVE of '10) but i do like to collect recipes.
In the spirit of reciprocity here are 2 of my favorites that I don't think I've posted before (dont' quote me, my memory is as reliable as a clockwork mouse)
Southwestern Suffed Acorn Squash
3 acorn squash (3/4-1lb each)
5oz turkey sausage (skin em if you couldnt' find bulk)
1 small onion, chopped
1/2 med. red bell pepper, chipped
1 clove garlic
1tbs chilli powder
1tsp ground cumin
2c chopped cherry tomatoes
1 15oz can black beans, rinsed
1/2tasp salt
several dashes hot pepper sauce
1c shredded swiss cheese
1) Preheat oven to 375F. Coat lg. baking sheet with cooking spray
2) Cut squash in half horizontally. Scoop out and discard seeds. Place squash cut-side dowm on prepared baking sheet. Bake until tender, about 45 mins.
3) Heat oil coated skillet over medium heat. Add turkey sausage and cook, stirring and breaking up with a wooden spoon, until lightly browned, 3-5 mins. Add onion and bell pepper: cook, stiring often, until softened - 3-5 mins. Stir in garlic, chili powder and cumin; cook for 30 sceonds. Stir in tomatoes, beans, salt and hot suace, scraping up any browned bits. Cover, reduce heat, and simmer until the tomateos are broken down, 10-12 mintues.
4) When the squash are tender, reduce oven temp. to 325F. Fill hte wquash halves with the turkey mixture. Top with cheese. Place on the baking hseet and bake until the filling is heated through and the cheese is melted, 8-10 minutes.
Make 6 servings.
Healthy Pancake Mix
2 1/2 c. whole wheat flour
1c buttermilk powder
5tbsp dried egg white, such as Just Whites
1/4c sugar
1 1/2tbsp baking powder
2tsp salt
1c flaxseed meal (get your flax whole and grind as you need it, if you dont the essential oils oxidize and they done' thave the beneficial effects)
1c non-fat dried milk
1/2c oat bran
1) whisk all ingredients together and store in air-tight container in freezer.
To make
1 1/2c skim milk
1/4c canola oil
1tsp vanilla extract
2c healthy pancake mix.
1)combine oil, milk and vanilla.
2)make well in center of dry pancake mix.
3) Pour in liquids and stir until just mixed.
3) Coat non stick griddle with spray and place over medium heat. use 1/4c batter (I use a little less) for each pancake, cook until bubble show on surface of pancak and edges look dry (you may have to play with the heat) Turn over and cook until golden, about 1.5 minutes longer.
Makes 12 pancakes.
